Avocado Tomato Sandwich

This Avocado Tomato Sandwich is a craving curer, and picky approved lunch (breakfast, dinner, or snack) that you (and your kids) are going to love!

To be honest, it took me awhile to enjoy eating avocados, there was actually a time I didn’t even like them, but now – a tomato and avocado sandwich just hits the spot when I’m craving something savory, salty, and unhealthy.

My kids, on the other hand, will eat avocados all by themselves, using the peel as a bowl and scooping out the fatty goodness with a spoon. I guess that’s what happens when avocado is one of the first foods they try as babies.

And luckily, even though avocados are known for being fatty, it’s a fatty food with tons of nutrients. Just check out how healthy they are!

Ingredients to Make the Best Avocado Tomato Sandwich Ever!

Bread: Use the bread you like the most, whether you make your own bread, like I sometimes do using my pizza dough recipe, or if you like buying it from the store. 

To use that recipe for bread, simply roll is up into a loaf pan, let rise in the loaf pan for 30-60 minutes, then bake at 400℉ for about 30 minutes.

Recently, I’ve been using sourdough bread to make these sandwiches and they come out amazing! I only wish I could get a sourdough starter to actually work for me, then I’d make my own sourdough bread – but just like plants, I can’t keep a sourdough starter alive.

Avocado: The best avocados to use in this recipe are ripe ones, they need to be soft and easy to spread, like butter.

For best results, if you can’t find ripe ones at the store, buy the most ripe ones you can find and let them ripen at room temperature. Since avocados are temperamental when it comes to ripening, you’re going to want to throw them in the fridge the second you feel them ripen, that way they stay ripe for longer (the last bag I bought and did this with, the avocados stayed good in the fridge for a few weeks – we just finished off the last one and it was still soft, yellow/green in color and perfect to spread on some toast!).

Or, if you’re worried the avocado will turn brown before you can get to it, toss it in a blender or food processor with a tiny bit of water to puree it, then freeze in an ice cube tray, and keep in a freezer safe bag or container until you need it.

Tomatoes: Choose your favorite tomatoes for this sandwich! If you don’t want a tedious job of slicing grape or cherry tomatoes in half, then opt for beefsteak, roma, or vine ripe tomatoes – they all taste great in this sandwich.

Garlic Salt: If you’re a fan of garlic and salt, then do yourself a favor and add garlic salt to this sandwich, you can thank me later!

Optional Add-ins:  I think this sandwich is perfect as is, but if you want to add something else, like sprouts, nutritional yeast, or even some vegan cheese or red onion, then feel free to do so! (Actually, I have had it with quartered red onion slices before, and I can say that it’s still just as delicious with them added!)

How to Make an Avocado and Tomato Sandwich

The best way to make an avocado tomato sandwich is by making it like a grilled cheese. Which is perfect for someone who recently switched to a vegan diet; you get to go through the motions of making a grilled cheese, but instead end up with a much healthier (and vegan) sandwich!!

Step one: Place your pan on the stove and turn the stove to medium heat.

Step two: Mash ¼ to ½ an avocado on each slice of bread.

Step three: Add sliced tomatoes to 2 slices of bread, on top of the avocado.

Step four: Sprinkle the garlic salt over everything!

Step five: Place the two slices of bread with only avocado and garlic salt on them on top of the slices with tomatoes.

Step six: Place one sandwich on your pan and cook until slightly golden on the bottom, then flip and cook again until slightly golden. Repeat with the second sandwich.
Step seven: Allow to cool slightly and enjoy!

OR, Cook it in the Toaster (for a more kid friendly method for making this avocado sandwich)

If you don’t want to cook this sandwich like a grilled cheese, then you can make it in the toaster! Follow the directions below to learn how.

  1. Pop  the slices of bread in the toaster, toast to desired
  2. Mash the avocado on the pieces of toast.
  3. Add the sliced tomato to one side.
  4. Generously sprinkle garlic salt over all slices.
  5. Place the ‘only avocado and garlic salt’ piece on top of the slice with tomatoes, and enjoy!
