Do you have trouble getting your children to eat healthy snacks throughout the day?

Or have trouble coming up with healthy snacks for your kids?

I used to!

With my girls being picky eaters, especially my 5 year old; I’ve realized how truly difficult it is to have my girls eat healthy snacks. That’s why this past year my two girls and I had an A to Z healthy snack challenge.

Over 26 weeks we came up with over 130 healthy snacks to eat. Some of the snacks immediately became favorite snacks that we all want to have on hand, while others weren’t so great. (It may have been a recipe I found, or the fact that it was the first time I tried making it. Don’t give up on the ones that didn’t work for us!)

Let’s have a look back on those 26 weeks, one letter at a time! With each letter, will come at least 5 healthy snacks. So, if you’re looking for snacks for your kids at home, or snacks to bring in to your childs school that starts with a specific letter; you’ve come to the right place!

If you’re interested in teaching your little ones the alphabet, with more than the use of snacks, you NEED to check out Prep Through Play: Letters!! Your little one will have tons of fun and conquer learning the entire alphabet in 5 weeks through playing games!

Snacks that Start with L

This past week we focused on the letter L. So, my instinct when we went grocery shopping for the week was to buy a bag of lemons and limes. I knew if I didn’t use all of them this week that I could always just add them to my water. This past week was so nice outside, as well, that’s probably why I only baked once for snacks, everything else was cold. We even went to the beach as a family on Monday evening, just to walk.

If you would like to catch up with the other letters of the alphabet that have been accomplished with this challenge so far, you can. Go here to check out letter K if you missed that, or head over to the A to Z series homepage!

Lemon Cookies

On Monday, I made lemon cookies.

They may not be the healthiest snack in the world because they have sugar in them. But at least there’s no veggie oil in them.

Myself and my older daughter actually enjoyed these, even though my older daughter wanted chocolate chip cookies (I promised to make her chickpea chocolate chip cookies later this week). However, my younger daughter didn’t seem to like these very much. She had a few bites, but that was about it. She’d rather eat the avocado I gave her than these cookies. My girls are avocado obsessed!

Little Candy Apples

On Tuesday we had little candy apples.

My girls loved these!

I wish I had more grapes to make more of these, but my girls couldn’t get enough of those either. I made the caramel and dipped the grapes in it, then we put them in the freezer on Monday to let them freeze overnight.

It was a little extra planning, but totally worth it so we could have this snack on Tuesday. It could’ve been a lot simpler to make these if I had just bought store bought caramel instead of making my own.

But, I feel the caramel I made was healthier. It only had 4 ingredients in it; coconut milk, pure maple syrup, a pinch of salt and a few drops of vanilla. This was a lot better than I thought it would be. And, for the topping, I ground up cashews and rolled the  grapes in it after rolling them in caramel. It was a complete success, and a little messy!

Lime Nice cream

On Wednesday we had lime nice cream.

This may have been better than our Tuesday snack! And, I apparently didn’t make enough of it; my girls kept asking for more, and I wouldn’t have minded more either. But, I used the last of the frozen banana slices I had.

I’ll probably be making this a lot over the summer. My older daughter told me “this is the best ice cream ever!!!!” Not too bad for stressing over trying to find a recipe and then finally giving up and just creating my own!

Lemonade

On Thursday I made lemonade.

It was a bit sour, but my older daughter loved this. It was made with the juice of 2 lemons, 2 cups of water, and about a tablespoon of brown sugar. I was going to use maple syrup to sweeten it, but we ran out.

My older daughter was really the only one who drank this, I tried a sip but it was too sour for me; it lasted 2 days before she finished it all. This was another thing that I had tried to find a recipe for but just ended up mixing things together instead. Who would’ve known that lemonade recipes all had so much sugar in them.

Lime-Strawberry Drink

On Friday I made a lime strawberry drink.

And, as you can see in the picture, it had chia seeds in it, as well, for a little more of a health benefit.

My older daughter absolutely loved this drink, chia seeds included. It was supposed to sit in the fridge for half an hour before drinking it; but, my older daughter couldn’t wait that long for it. She also took some lemonade from the day before and mixed it in; she wanted to experiment with ingredients, too.

Personally, it wasn’t my favorite drink; I’m not a big fan of chia seeds in my drink unless it’s a smoothie.
