Do you have trouble getting your children to eat healthy snacks throughout the day?

Or have trouble coming up with healthy snacks for your kids?

I used to!

With my girls being picky eaters, especially my 5 year old; I’ve realized how truly difficult it is to have my girls eat healthy snacks. That’s why this past year my two girls and I had an A to Z healthy snack challenge.

Over 26 weeks we came up with over 130 healthy snacks to eat. Some of the snacks immediately became favorite snacks that we all want to have on hand, while others weren’t so great. (It may have been a recipe I found, or the fact that it was the first time I tried making it. Don’t give up on the ones that didn’t work for us!)

Let’s have a look back on those 26 weeks, one letter at a time! With each letter, will come at least 5 healthy snacks. So, if you’re looking for snacks for your kids at home, or snacks to bring in to your childs school that starts with a specific letter; you’ve come to the right place!

If you’re interested in teaching your little ones the alphabet, with more than the use of snacks, you NEED to check out Prep Through Play: Letters!! Your little one will have tons of fun and conquer learning the entire alphabet in 5 weeks through playing games!

Snacks that Start with Z

This past week we focused on the letter Z; the last week for our healthy A to Z snack challenge. The last week that I’ll have to write out my meal plan to include snacks that start with a certain letter of the alphabet. This challenge was fun, but also, at times, an actual challenge.

If you would like to check out snacks starting with the other letters of the alphabet that come before Z. Go here to check out letter Y, or head over to the A to Z series homepage!

Zucchini Muffins

On Monday I made Zucchini Muffins.

I used the same recipe that I used for the yellow squash muffins; just switched out the vegetable, again. These were much better with zucchini, rather than with yellow squash and both my daughters would agree. It’s not in the picture, but I did make some icing for these, as well. I know it’s not the healthiest, but I bought the ingredients for the icing for Wednesday’s snack. And, my older daughter asked me to make some for the top of these.

They did taste better with the icing!

Zucchini Bread

On Tuesday I made zucchini bread.

And, I must have done something right. I had to make two loafs because my husband even loved it! My girls and I liked it, too!. But, it’s a big deal when my husband likes something I make; it doesn’t happen very often. I think the raisins I put in it may have helped.

Tuesday’s snack was a success!

Zucchini Cake

On Wednesday I made Zucchini cake with lemon icing.

Unlike on Monday when I made regular icing, my older daughter did not like the lemon icing. So, that kind of ruined this whole snack for her; she still ate it, though. My younger daughter loved this, and I enjoyed it, as well. It was best the first day we had it. After the first day it did get a little soggy.

But, that’s not to say it went to waste, we still ate it.

Ziti in a Cup

On Thursday I wanted to make vegan ziti in a cup, so I did.

I searched for a recipe online and couldn’t find one I liked, and that I had all the ingredients for; so, I made my own.

It was delicious!

My older daughter told me that she didn’t like this because she doesn’t like anything I cook. But, she still ate it. Sometimes you just have to play a game (don’t you dare eat it!) in order to get a child to admit they like something. My 20 month old absolutely loved this. She ate two full cups of it, as a snack!

If you are going to make these I would recommend using silicone baking cups, or I would assume that ramekins would work as well. I’ve only used my baking cups, so I’m not sure how they would turn out. I would not recommend using a regular muffin tin, though.  I’ll post the recipe on my site at a later date, and I’ll also update this post with the link once posted!

Zucchini in Sauce

On Friday I made zucchini in sauce, or italian zucchini.

It is super simple to make; just cook some zucchini til it’s soft, not soggy, then drain and add some marinara sauce. It works as a snack or a side dish. I love it and so does my 20 month old, my older daughter didn’t like it that much. She claims she doesn’t like sauce, so I wasn’t too shocked she didn’t like this.

Alright, so I did a bit of baking this week, and a lot of eating baked goods. In my defense, they were good and contained a vegetable, my girls loved them, too! But, to sum up this past week with a list,

It’s easier to show them how delicious fruits and veggies are now, than waiting til they’re older and hoping they will eat healthy. This is something we need to teach them and lead by example with.
