What Makes Vegan Pancakes Better?

Vegan pancakes are healthier than regular pancakes because they don’t contain any LDL cholesterol, which is the bad cholesterol that will build up in your arteries. The main ingredient in non-vegan pancakes that contains cholesterol is the eggs.

The recipe below also has a banana in it, boosting your potassium intake for the day.

And, the oat flour and flax egg gives you an additional intake of fiber, something that most Americans need more of in their daily diet!

  • Make the batter by whisking together the flour, sugar, and baking powder.
  • Stir in the oil, water, and vanilla.
  • Fold in the chocolate chips.

  • Heat your pan on medium to low heat.
  • Once the pan is hot, pour about ⅓ cup of the batter onto the pan and cook until the top is bubbling, then flip and cook for about the same amount of time, or until the bottom is golden.

  • 2 ¼ cups All Purpose Flour
  • 2 tablespoons Granulated Sugar
  • 2 tablespoons Baking Powder
  • ¼ cup Vegetable Oil
  • 1 ½ cups Water
  • 1 teaspoon Vanilla Extract
  • 1 cup non-dairy Chocolate Chips

Optional Toppings

  • Syrup
  • Extra chocolate chips
  • Coconut Whipped Cream
  • Bananas
  • Plant-based Butter

Instructions
 

  • Make the batter by whisking together the flour, sugar, and baking powder.

Notes

Maple syrup can be optional, you could use powdered sugar or any other topping you prefer, or none at all.
These pancakes do freeze well and can be made in batches, by doubling or tripling the recipe, and heated up for busy mornings!
