This vegan apple pie burrito recipe is super simple to make and makes for a delicious breakfast, snack, or even a dessert! Call it a burrito, enchilada, or whatever you please, it's a picky eater friendly recipe where the sugar is optional, but always requested!
Peel, chop , and cook the apples on the stove with the cinnamon and water til soft (adding a little water at a time)
Once apples are soft (about 5-10 minutes); add in the sugar and cornstarch (add a little cornstarch at a time, just enough to make the apple mixture not runny) and stir well. If still run, drain the apple mixture to get rid of extra water.
Add ⅛ of the apple mixture to one tortilla, in the middle about two thirds of the way down
Roll the tortilla up like a burrito (tuck in the sides and then roll)
Add the burrito to a 9x13in baking dish and repeat with the other 7 tortillas and the rest of the apple mixture
(Optional) Brush some butter & sugar on top of the burritos and bake for 20 minutes
Remove from oven and allow to cool. While cooling mix all of the ingredients together for the brown sugar glaze (if using).
Add the glaze to each individual burrito and serve while warm! (Or, add caramel sauce and vegan vanilla ice cream and serve!)

The added sugar & vegan butter, and the glaze, are completely optional and simply make for a sweeter burrito, more like a dessert. Feel free to omit those for a healthier meal or snack.Any type of apple will do, our favorite is honeycrisp!You may be able to sub in flour for the cornstarch if you don't have that on hand; the purpose of the cornstarch is to thicken the mixture.
