You and your kids will love this healthier version of classic chocolate chip pancakes! A nice breakfast for a relaxed weekend morning! (Or, freeze and pop in the toaster for a quick breakfast before school.)
Make the batter by whisking together the flour, sugar, and baking powder.
Stir in the oil, water, and vanilla.
Fold in the chocolate chips.
Heat your pan on medium to low heat.
Once the pan is hot, pour about ⅓ cup of the batter onto the pan and cook until the top is bubbling, then flip and cook for about the same amount of time, or until the bottom is golden.
Repeat until the batter is gone.
Enjoy your pancakes warm with the toppings of your choice!

Maple syrup can be optional, you could use powdered sugar or any other topping you prefer, or none at all.These pancakes do freeze well and can be made in batches, by doubling or tripling the recipe, and heated up for busy mornings!
