Cranberry Apple Muffins
These cranberry apple muffins are great for the fall, or any time of the year! Enjoy them as a healthy treat with your kids.

Ingredients

oat flour

cup
all purpose flour

cup
brown sugar

tsp
baking soda

tsp
baking powder
½
tsp
salt
½
cup
applesauce
2
flax eggs
1
cup
soymilk
1
tsp
cinnamon
1
cup
dried cranberries
2
medium apples
diced
Instructions
Preheat oven to 350°F and set out silicone baking cups or add liners to a muffin tin.
Make flax egg by mixing together 2 tbsp flaxmeal and 6 tbsp water, set aside.
Add flours, baking powder, baking soda, and salt. Stir til mixed well.
Add applesauce, flax eggs, and milk in with the dry ingredients and mix well.
Add in apples, dried cranberries, and cinnamon and fold in.
Add batter to baking cups or muffin tin, about ⅔ of the way to the top.
Bake for about 30 minutes or til almost golden on the top.
Let cool and enjoy!
Notes
These freeze well and take about 15 seconds to warm up in the microwave, or leave out overnight to thaw.
