Christmas Green Vegan Sugar Cookies

This vegan sugar cookie recipe is perfect for Christmas with the natural green coloring from the avocados! Yes, avocado replaces the vegan butter in this recipe, so it is super healthy for kids. No need to feel guilty about your kids eating these!

Ingredients

  • ½ cup pureed Avocado
  • ½ cup brown sugar
  • 2 flax eggs
  • 1 tsp vanilla
  • 2 tsp baking powder
  • cup oat flour (+ more for rolling and cutting the dough)

Instructions

  1. First puree the avocado (or bring to room temperature if using frozen pureed avocado cubes.

  2. Cream together the sugar with the avocado.

  3. Stir in the flax eggs and vanilla.

  4. Add the oat flour and baking powder on top, then stir well til it forms a dough.

  5. Flour a surface with flour (I use all purpose flour for this, but use what you have) and preheat oven to 350°F.

  6. Roll the dough into a ball, then roll flat with a rolling pin, about ¼-½ inch thick.

  7. Get your cookie cutters and cut out the shapes to fill a cookie tray.

  8. Bake the cookies at 350°F for about 8-10 minutes.

  9. Let cool and decorate with one, or both, of the frosting recipes below!!

Recipe Notes

*If you have more dough after filling a cookie tray, simply roll into a ball, roll flat with the rolling pin and cut out more cookies!
