These oat flour sugar cookies are ones that both you and your kids will love! Using fun holiday shapes your kids will have fun making them and be proud to eat what they've helped make. And with the use of oat flour instead of all purpose flour, you can feel better about them eating so many of their beautiful creations!

Ingredients
½cupvegan butter(we love Earth Balance)
½cupbrown sugar
2flax eggs
1tspvanilla
2tspbaking powder
2¾cupoat flour(+ more for rolling and cutting the dough)
Instructions
Cream together the sugar with the vegan butter.
Stir in the flax eggs and vanilla.
Add the oat flour and baking powder on top, then stir well til it forms a dough.
Flour a surface with flour (I use all purpose flour for this, but use what you have) and preheat oven to 350°F.
Roll the dough into a ball, then roll flat with a rolling pin, about ¼-½ inch thick.
Get your cookie cutters and cut out the shapes to fill a cookie tray.
Bake the cookies at 350°F for about 8-10 minutes.

Notes
*If you have more dough after filling a cookie tray, simply roll into a ball, roll flat with the rolling pin and cut out more cookies!
