1canChickpeas(15.5oz or similar size)
¾cupPeanut Butter
½cupDates
1tspBaking Powder
Instructions
Preheat oven to 350°F
Add all ingredients to food processor and process (pulse or low setting) til smooth
Bake for about 10 minutes, let cool, & enjoy!
Notes
*If using dried chickpeas, start with abut 2/3 cup dried. Starting with dried chickpeas will take much more time.*To make the cookies smooth, consider removing the skin of each chickpea; it's tedious but will make a bit of a difference.*Does not matter which type of peanut butter used.*Dates do not have to be soaked first unless completely dry, they should have some flex to them.*Store in a container or bag in fridge or freezer- do not store on the counter.
