No-Bake Coconut Cookies

Delicious, easy, and tastes almost like candy! It's a no-bake coconut cookie you can feed your kids and not feel guilty about!

Ingredients

  • 1 cup dates
  • 1 cup coconut shreds

Instructions

  1. Preheat oven to 400°F, spread coconut shreds in a thin layer on a baking sheet and bake for 5 to 10 minutes; at 5 minutes stir them around to golden evenly.

  2. Process the dates and golden coconut shreds in a food processor.

  3. Roll dough into balls and press down onto parchment paper; let set in freezer for about an hour and enjoy!

Recipe Notes

Store in freezer.

Let thaw slightly before eating.

Be careful not to burn the coconut shreds; carefully stir around the shreds in the oven to bake evenly.
