This strawberry parfait is the perfect summer breakfast, or treat! It’s sweet, cold, delicious, and filling while still feeling like a light meal or snack!
Assemble the parfait starting with 1-2 tablespoons of granola on the bottom.
Then add about 2 tablespoons of yogurt.
Next, add 1-2 tablespoons of diced strawberries.
Add another 2 tablespoons granola, yogurt, an diced strawberries on top.
Then add about 1 tablespoon more yogurt on top, sprinkle a little more granola, add 1 large berry and 2 blueberries, a teaspoon of coconut shreds and enjoy!
Repeat for the second parfait.
Notes
Each layer is about 2 tablespoons of the ingredient.
This recipe is best when enjoyed right after assembling, and cannot be saved well after assembling. The granola would become mushy if you try saving it after assembling.
