Preheat oven to 400°F, spread coconut shreds in a thin layer on a baking sheet and bake for 5 to 10 minutes; at 5 minutes stir them around to golden evenly.
Process the dates and golden coconut shreds in a food processor.
Roll dough into balls and press down onto parchment paper; let set in freezer for about an hour and enjoy!
