If it weren’t for having to use the oven and a food processor, I’d say these cookies are easy enough for a child to make; maybe older kids, but they would still need to be supervised.

- Bake coconut shreds til golden
- Pour the golden coconut shreds and the dates into a food processor and process til almost gooey
- Roll the dough into balls, then smash then flat on parchment paper (or something easy to peel them off of)
- Let set in the freezer

Ingredients
- 1 cup dates
- 1 cup coconut shreds
Instructions
- Preheat oven to 400°F, spread coconut shreds in a thin layer on a baking sheet and bake for 5 to 10 minutes; at 5 minutes stir them around to golden evenly.
- Process the dates and golden coconut shreds in a food processor.
- Roll dough into balls and press down onto parchment paper; let set in freezer for about an hour and enjoy!
