Peanut Butter Chickpea Cookies
Your kids will love this peanut butter chickpea cookies recipe! 100% whole food plant based so they can eat the 'cookie dough', too!
Ingredients
- 1 can Chickpeas (15.5oz or similar size)
- ¾ cup Peanut Butter
- ½ cup Dates
- 1 tsp Baking Powder
Instructions

Preheat oven to 350°F

Add all ingredients to food processor and process (pulse or low setting) til smooth

Bake for about 10 minutes, let cool, & enjoy!
Recipe Notes
*If using dried chickpeas, start with abut 2/3 cup dried. Starting with dried chickpeas will take much more time.
*To make the cookies smooth, consider removing the skin of each chickpea; it’s tedious but will make a bit of a difference.
*Does not matter which type of peanut butter used.
*Dates do not have to be soaked first unless completely dry, they should have some flex to them.
*Store in a container or bag in fridge or freezer- do not store on the counter.
