Healthy & Vegan Strawberry Cheesecake Smoothie

The few times I had, it was not a huge success…
The one that was ordered online, there was just something a little off about it.
It wasn’t bad, but it also wasn’t amazing.
And whenever I go and try to find a recipe for one, it either uses coconut milk, by the can, or so many nuts it’s hard to part ways with them to make it.
Then something is off about the homemade kind, as well.
I’m still searching for, and experimenting, to try to find the ‘perfect’ cheesecake recipe that doesn’t taste off; but that doesn’t mean I can’t enjoy other desserts that have a hint of the cheesecake taste to it!
Which is where this amazing vegan strawberry cheesecake smoothie comes in!!
How to Make This Strawberry Cheesecake Smoothie
First, if you’re starting with fresh fruit, you’ll need to freeze your bananas and strawberries (at least a cup each), until they are completely frozen.
Next, if you have a weak blender, you’ll want to soak your cashews for at least an hour to soften them up a bit.
Then, get prepared, because this smoothie recipe will be a hard one to follow, haha, just kidding!
It’s really quite simple.
Once you have all of your ingredients ready, which is you keep a bag of frozen bananas in your freezer at all times, and frozen strawberries, then you should always be ready; simply add all of your ingredients to your blend and blend til smooth!
The order in which you add the ingredients to your blender will depend on your blender.
For high speed blenders, such as a nutri-ninja or nutri-bullet, start with your frozen ingredients, then nuts, and then liquids.
If you have a larger blender, like a full size vitamix, then put your ingredients in in the opposite order.
It should only take about 45 seconds for your smoothie to get velvety smooth.
Once done blending, pour into a glass, or glasses if sharing with kids, and enjoy!!
Recipe Notes
*For best results, make sure the bananas and strawberries are completely frozen before blending.
If your blender is not strong, or a high speed blender, you may need to soak your cashews before hand for an hour or so; this will help soften them up to allow them to be blended more easily.

- 1 cup frozen strawberries
- 1 cup frozen bananas
- 5 tbsp cashews
- 1 tsp lemon juice
- 1½ cups almond milk
- ¼ tsp vanilla
Instructions
- Measure out all ingredients and add to your blender.
- Blend for about 45 seconds, or until nice and smooth!
