Vegan Peanut Butter Blondies

I remember peanut butter swirl bars from when I was little. I loved them! You could even say they were my favorite dessert.

But, after not having them for some time, and forgetting what went into them, I decided I wanted to make them for my girls….

Yeah, not going to happen, at least not with my moms recipe. Which called for loads of butter, even more sugar, all purpose flour…dare I go on.

There was no way I was going to make the ‘original’ recipe for my girls. Not only was it super unhealthy, but the sugar rush (and then crash) just would not be worth it.

So, I created my own version, based on my moms recipe, but much, much healthier!

How to Make this Vegan Peanut Butter Swirl Blondies Recipe

Start by preheating the oven to 350°F and getting out everything you’ll need.

Then line an 8×8 baking dish with parchment paper, or grease the dish, whichever you prefer.

Start making a flax egg by stirring together 1 tablespoon of flax meal (ground flax seeds) with 2-3 tablespoons of water. If you don’t have flax meal, you can use this to grind up your flax seeds.

While you let the flax egg sit and goop up a bit, combine the sugar and peanut butter this it’s well combined.

To allow the flax meal and water to form a flax egg, it should take about 5 minutes after stirring. This time usually passes while I cream together the sugar and peanut butter; I have kids and everything seems to take longer when you have kids! If it hasn’t been long enough, just wait a few minutes and then add it and stir it in.

Now, for the Dry Ingredients

This next step is important, you shouldn’t just stir in each dry ingredient as you add it in.

Measure and pour in the flour, baking powder, baking soda, and salt. Start stirring it at the top to mix all the dry ingredients together first, then start mixing it in with the wet ingredients.

The dough may start to get tough at this point, and at this point you will add in the soy milk (or alternative non-dairy milk). Make sure it gets completely stirred in.

Then fold in almost all of the chocolate chips. Leave about a handful out to sprinkle on top, or you can add the whole amount of chocolate chips in and add an extra handful to the recipe.

Once mixed well, transfer to the parchment prepared 8X8 dish, flatten with a spatula and add the extra (or rest of) chocolate chips on top.

The Swirl in the Peanut Butter Swirl Blondies

Place the dish in the oven and bake for about five minutes, or until you see the chocolate chips on top start to melt.

Take the blondies out and swirl the chocolate chips on top with a knife. Starting at one end, going back and forth horizontally, and then again vertically. It’s up to you how deep into the blondies you go with the knife. You can go almost all the way through them for the ultimate swirl all the way through, or just on top for a nice design!

Finish baking them at the same temperature for about 15 minutes.

Let cool, and enjoy!

Recipe Notes

*To swirl the chocolate chips, start by gently pressing into the dough on one side and moving it horizontally from one side to the other of the dish without removing it. Then do it again but vertically.

*To test to make sure it’s done, make sure to poke the middle with a toothpick- if it comes out clean, then it’s done.

  • cup peanut butter
  • ½ cup brown sugar
  • 1 flax egg
  • 1 cup oat flour
  • ½ tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • ¼ cup soy milk (or non-dairy milk of choice)
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F and line an 8X8 baking dish with parchment paper
  • Make the flax egg: stir together 1 tbsp flax meal (ground flax seeds) with 2-3 tbsp water, let sit
  • Combine sugar and peanut butter til well mixed and creamy. Then stir in flax egg.
  • Add flour, baking powder, baking soda, and salt, stir well.
  • Stir in soy milk til completely combined
  • Fold in chocolate chips.
  • Transfer dough to 8X8 dish and flatten with spatula. Place in preheated oven.
  • After it's been in the oven for about 5 minutes, remove and swirl the chocolate chips on top with a knife. Place back in oven for about 15 more minutes. Let cool and enjoy!
