In this article you will find a delicious vegan stuffed shells recipe that even non-vegans will love! Honestly, they probably won’t even realize it’s no vegan! The tofu ricotta has a cashew cream that makes it taste amazingly similar to real ricotta, and kids love it, too!

Even my 15 month old loves them, though she always needs a bath after eating them!
I hadn’t even heard of a smoothie bowl til I was a mom, and now I can’t imagine a world without them; they’re also the whole reason I bought the coconut bowls you see in the pictures. Just to make this dessert (?) even more special.
This ultimate smoothie bowl recipe will teach you exactly how to make a breakfast or snack that is:

How to Make This Ultimate Smoothie Bowl Recipe
The first thing you’ll want to do is get out your toppings;
- sliced strawberries
- chocolate chips
- cashews
- walnuts
- pecans
- raisins
- craisins
- sliced almonds
- flax meal
If that seems a bit weird, getting down the toppings when you have nothing to put them on yet, don’t worry; I’ve got a plan!!
Next, fill up your high speed blender (this is what I have), or food processor (this is what I have), with all of the smoothie ingredients;
- soy milk
- spinach
- hemp, chia, and flax seeds
- frozen banana chunks
- frozen strawberries
Blend, or process, til everything is well combined.
You may have to stop a few times to push the smoothie down or add a little more non-dairy milk if it gets really stubborn.
Do not try this with a cheap blender!!
The first time I made this I used a nutri-ninja and that didn’t work well, I ended up having to use my food processor instead…dirtying more dishes 🙁
I know have a vitamix, and that works super well with this recipe! (I love my vitamix!! It’s amazing, my husband bought it for me as an anniversary present!)
Once you have it well blended, pour into a bowl, quickly add you toppings and then enjoy!!


Ultimate Smoothie Bowl Recipe

- Vitamix
- OR food processor
Ingredients
Smoothie Base
- 2 handfuls Spinach
- 1½ Frozen banana
- 2 handfuls Frozen strawberries
- 1 tbsp Hemp hearts, flaxseeds, and chia seeds
- ½ to 1 cup Soy milk (or any non-dairy milk)
Toppings
- 2-3 Fresh strawberries sliced
- 1 tbsp Dark chocolate chips
- 1 tbsp Cashews
- 1 tbsp Walnuts
- 1 tbsp Pecans
- 1 tbsp Raisins
- 1 tbsp Dried cranberries
- 1 tbsp Sliced almonds
- 1 tsp Flax meal
Instructions
- Fill your high speed blender with all of the smoothie ingredients in the order according to the blender directions (Ex. Vitamix- soy milk -> spinach -> seeds -> frozen fruit)
- Blend til mixed well. You may need to push it down a few times to get everything blended well. Add a little more soy milk if need be.
- Once well blended, pour into a bowl and add all of the toppings.
- Enjoy!!
