How to Make This Chocolate Covered Banana Bites Recipe

You’ll want to start by making sure you have frozen banana slices in your freezer.

If you don’t, then go slice up some bananas right now and freeze them. It could take from a few hours to overnight for them to freeze. So, if you’re able to, do this the day before you want to make them.

When slicing them, make sure you’re slicing them a half to a full inch thick, with smooth edges; this will make the rest of the recipe easier to make.

We don’t want chunks here. Chunks are only alright when we’re going to be blending bananas into nice cream, smoothies, or smoothie bowls; not using them for mini chocolate covered banana & peanut butter sandwiches!

After the Banana Slices are Frozen…

Once the banana slices are frozen, go ahead and remove them from the freezer, grab a jar of peanut butter and start making mini peanut butter sandwiches with the slices.

Try to do this quickly so the bananas don’t melt while you’re spreading the peanut butter on one side of a banana slice and then adding another slice to the other side of the peanut butter to make a ‘sandwich’.

When you’re done, and all of the banana slices are used up; put them back in the freezer to freeze back up while you make the chocolate.

Making the Chocolate for these Frozen Banana Bites Desserts

Add the chocolate chips and coconut oil to a microwave safe dish and melt in 5 to 10 second intervals. Stir each time the microwave stops, and do this until it is completely melted.

If you don’t have, or don’t like using, a microwave, you can also melt the chocolate chips and coconut oil on the stove in a small pot. Whichever way you prefer.

Next, get a cookie sheet and like it with parchment paper, silpat, or something else that will be easy to peel chocolate off of once it’s frozen.

Then, get the mini banana sandwiches back out and dip them in the melted chocolate.

Now you can dip half of the banana and peanut butter mini sandwich in the chocolate, or dunk it all in, up to you!

Once they’re covered the amount you want them covered, set on the parchment paper on the cookie sheet. Do this with all of them and then place back in the freezer to solidify.

Don’t forget to enjoy your frozen dessert with your kids!

If you’re in a rush and need these made asap, you can skip freezing the banana slices before making this, but it may be more difficult to spread the peanut butter on banana slices.

Ingredients
  

  • 40 Banana Slices ~3 or 4 bananas
  • 5 tablespoons Peanut Butter
  • 6 tablespoons Chocolate Chips
  • 2 teaspoon Coconut Oil

Instructions
 

  • Slice bananas into half an inch to a full inch thick.
  • Measure out peanut butter and spread peanut butter on half of the
  • banana slices. Top those banana slices with another banana slice.
  • Add the chocolate chips and coconut oil to a microwave safe dish and
  • melt in 5 to 10 second increments til completely melted- stir each time.
  • Line a baking sheet with parchment paper.
  • Dip the banana sandwiches in the chocolate, either all the way or
  • halfway, then place on parchment paper.
  • Once done dipping in chocolate, let solidify in the freezer. Enjoy!

Notes
