Blueberry Nice Cream Recipe

What is so great about this Blueberry Nice Cream Recipe?

Not only is this vegan ice cream recipe delicious, it also has added nutrients for our growing kids and ourselves!

The blueberries provide plenty of anti-oxidants, but there are also cashews and walnuts blended into this nice cream to give it a thicker texture with added minerals and a little bit of omega-3’s!

Plus, the nuts make this taste a little like a blueberry cheesecake ice cream, but still vegan and way more healthy.

How to Make This Nutty Blueberry Nice Cream

Did I mention this recipe is super easy to make, too!

One of the most important things for making this is to make sure all of the fruit is frozen beforehand, otherwise it’ll end up like a smoothie rather than ice cream.

Next, make sure you don’t add too much non-dairy milk, or again, it’ll end up more like a smoothie than ice cream.

If you don’t have a food processor (this is what I have-super affordable and I’ve had it for almost 5 years!) or strong high speed blender (this is what I have), then you’ll want to quick soak the nuts by boiling them for 5 to 15 minutes.

Sometimes it really pays to have the right equipment, but you can always make due without, as well, I went years without a high quality high speed blender.

Once all of your ingredients are ready, simply pour everything into the blender or food processor and blend/process til you reach the right consistency.

It’s alright if there are still a couple of fruit chunks, but most of them should be broken down!

Then you can either freeze it and make it scoop-able like regular ice cream.

OR pour into your favorite bowl and enjoy this huge nice cream as soft serve!

Equipment

  • High Speed Blender or Food Processor

Ingredients
  

  • cup vanilla almond milk
  • 2-3 frozen banana chunks
  • cup frozen blueberries
  • 2 tbsp cashews raw
  • 1 tbsp chopped walnuts
  • ½ tsp vanilla

Instructions
 

  • Fill your blender or food processor with all ingredients.
  • Blend/process til you get desired consistency, stopping once in awhile to push the mixture down or scrape the sides when needed.
  • Enjoy!

Notes

*If your high speed blender, or regular blender isn’t as strong as a Vitamix, you may need to soak the nuts before hand.
If you don’t have a high quality high speed blender, it may be best to use a food processor instead.
*Feel free to sub in any non-dairy milk, however you may need to double the vanilla extract if not using a vanilla milk.
