How to Make Healthy Apple Nachos
In this article you will find a delicious vegan stuffed shells recipe that even non-vegans will love! Honestly, they probably won’t even realize it’s no vegan! The tofu ricotta has a cashew cream that makes it taste amazingly similar to real ricotta, and kids love it, too!
There are few dinner recipes that I remember my mom making when I was younger, but stuffed shells was one of them.

The ones she made were not vegan, and honestly, I can’t remember if she made some with meat or not. She still would’ve made mine vegetarian, since I stopped eating meat when I was 7. Ha, and she considered me picky back then!
But, still, I enjoyed those stuffed shells, so much so I knew I needed to create a version that I love even more. That was also cruelty free, healthy, and vegan! (I know, it’s a bit repetitive…)

How to Make Healthy Apple Nachos
You can start making this recipe by getting out all of the ingredients;
- apples
- almond butter
- peanut butter
- mini dairy free chocolate chips
- peanuts and/or other nuts and seeds
Feel free to sub different ingredients in and out, or add in small dried fruit like raisins!
Then skin the apples.
Slice the apples; use an apple corer if you have one. Using an apple corer that also slices the apples will save you loads of time!**
After that, you’ll just arrange the apple slices on a plate, or multiple plates, how you would like!
If you’re making this for multiple kids and they don’t like to share, go ahead and make mini spirals of apples on each of their plates.
Or, just toss them on the plates and let them land where they will; it really doesn’t matter!
If you’re kids don’t mind sharing a large plate of apple nachos (like my girls don’t care, they share everything), then use one plate and have less dishes to wash after; up to you!
Once the apples are on the plate(s), drizzle the nut (or seed) butters over the apple slices.
Then add the vegan chocolate chips, nuts, and anything else you’d like to decorate the ‘nachos’ with!
Simple as that!
You could even have your kids make this, all kids over 18 months would be able to do this recipe after you’ve peeled and sliced the apples!
Having them do the design on the plate themselves may even give you a 5 minute break…you know, to grab your coffee out of the microwave and maybe even finish it!!

*Feel free to customize this recipe to your child’s preference, or swap ingredients if your child has allergies or food sensitivities.

- 2-3 Apples
- 1-2 tbsp Almond Butter melted
- 1-2 tbsp Peanut Butter melted
- 2 tbsp Mini Non-Dairy Chocolate Chips
- 1 handful Peanuts (or other nuts or seeds)
Instructions
- Core and slice the Apples.
- Arrange how you would like (all on 1 plate, or in individual plates/bowls)
- Drizzle almond and peanut butter on top of the apples slices.
- Sprinkle chocolate chips and nuts (or seeds) on top. Enjoy!
