How to Make Vegan Chocolate Chip Pancakes

Breakfast is the most important meal of the day, and what we eat for it, and drink, can determine what we eat for the rest of the day, and how we feel. That’s why starting your day with vegan chocolate chip pancakes is a great start to your morning!

Not only does this recipe call for chocolate chips, making it delicious; it also calls for bananas, flax eggs, and more to make nutrient dense, unlike pancakes made with purely all purpose flour and tons of sugar.

And, guess what else, this vegan chocolate chip pancakes recipe only has two tablespoons of sugar. That is not enough to have your kids going crazy and then having a sugar crash!

What Makes Vegan Pancakes Better?

Vegan pancakes are healthier than regular pancakes because they don’t contain any LDL cholesterol, which is the bad cholesterol that will build up in your arteries. The main ingredient in non-vegan pancakes that contains cholesterol is the eggs.

The recipe below also has a banana in it, boosting your potassium intake for the day.

And, the oat flour and flax egg gives you an additional intake of fiber, something that most Americans need more of in their daily diet!

You get those benefits, without taking away the fluffiness or deliciousness of regular pancakes.

They also freeze well, so double or triple the batch and know what it feels like to have a yummy breakfast without all the work first thing in the morning!

 

Let’s Make these Fluffy Vegan Pancakes!

Start with making the flax egg, since the ingredients for the flax egg need to sit for a few minutes before adding to the pancake batter.

You can make the flax egg by mixing together 1 tbsp flax meal with 3 tbsp water and then set aside til you need it.

Next, mix together the 2 different flours, the sugar, baking powder, and salt. Stir well.

Mash the banana with a fork or whisk. I like using a whisk as it’s easier and does a better job of mashing it up.

Then, add the milk, mashed banana, and flax egg to dry ingredients and stir til well combined.

Add in chocolate chips and stir til spread through out batter.

Turn your stove to medium heat and add oil to a medium sized pan.

Once heated, add about a quarter cup of batter to the pan to cook.

When the batter is starting to bubble and bottom becomes firm, flip the pancake and let it cook on other side til the pancake looks entirely firm.

Repeat til all the batter is gone.

Enjoy while warm and enjoy with some pure maple syrup!

Use whichever toppings you prefer. I enjoy mine with maple syrup, but you could use powdered sugar or any other topping or none at all.

These pancakes also freeze well and can be made in batches, by doubling or tripling the recipe, and heated up for busy mornings! Which is what I love to do; I love eating pancakes in the morning, but I hate making food right when I wake up, so these are perfect.

Ingredients

  • ¾ cup oat flour
  • ¾ cup all purpose flour

  • cup soy milk (or other non-dairy milk)
  • 1 ripe banana mashed
  • 1 flax egg
  • ½ cup vegan chocolate chips
  • oil (coconut or another kind) for cooking
  • maple syrup

Instructions
