Mango Parfait (5 minutes & vegan)

This Vegan Mango Parfait recipe is the perfect breakfast for hot summer days when you’re wishing you were somewhere tropical! You only need 3-4 ingredients and it takes just minutes to throw together and is also a picky eater & kid approved recipe!

To ensure this recipe is a healthy one, if you’re into eating healthy food and feeding healthy food to your kids, I would highly recommend you make your own granola for this recipe, unless you have a brand you love and know is good for you. I find that a lot of granola brands have unneeded oils in them.

Ingredients for Mango Parfaits

The 4 ingredients needed for mango parfaits.

Almond Milk Yogurt: Almond milk yogurt is my personal favorite kind of yogurt. However, you may prefer another kind and that is fine! Make this parfait with whichever yogurt you want or have on hand. I simply recommend that you use a plain or vanilla flavored yogurt, not chocolate or a fruit flavored one (unless it’s mango flavored). We want the fruit of our parfait to be the main flavor.

Mangoes:  Use recipe mangoes for this recipe. If you want to use another fruit, such as berries, or a rainbow of fruit, go right ahead!

Granola: Use your favorite neutral flavored granola in this recipe to give it some crunch!

Coconut Shreds: Coconut shreds are totally optional. I have one child who will eat coconut shreds from the bag and another who will refuse to eat something if it has coconut shreds on it, so whether or not you use this, it’s up to you!

How to Make this Mango Parfait

Step one:  Make the granola.

Step two: Make the mango purée by taking half of the cut up mango chunks and blending them.

Step three: Assemble the parfait starting with 1-2 tablespoons of granola on the bottom.

Step four: Then add about 2 tablespoons of yogurt.

Step five: Add about 2 tablespoons of the mango parfait on top of the yogurt.

Step six: Add about 2 tablespoons of granola on top of the mango puree.

Step seven: Add 2 more tablespoons of yogurt on top of the granola.

Step eight: Sprinkle a little more granola on top, add some mango chunks, and sprinkle coconut shreds on the top.

Step nine: Repeat for the second parfait.

How to Serve Mango Parfaits

Serve cold, as soon as it’s ready and enjoy ASAP!

Enjoy it as breakfast, a component of your breakfast, as a snack, or as a delicious mango dessert, up to you.

How to Store Parfaits

Parfaits are best when freshly made, saving them can result in soggy granola and no one wants that!

If you must save it after it’s made, then the best way to save it is in the fridge. Be sure you cover it, and try to finish it the same day it’s made.

FAQs for Vegan Parfaits

  1. Do I have to use almond milk yogurt, or can I use a different kind?
    1. You can use any brand or type of yogurt you like. It is recommended to not use a flavored yogurt, unless it’s vanilla, simply because the fruity flavor in the parfait should come from the fruit. If you need to buy a flavored yogurt choose vanilla or the same flavor as the parfait you are making.
  2. What size yogurt do I need for this recipe?
    1. You can buy a tub of yogurt. Or, you can buy the individual sized yogurts. 1 individual sized yogurt will be enough for 1 parfait, so you will need to buy as many individual sized yogurts as the number of parfaits you plan on making.
  3. Can I double or triple this recipe?
    1. Of course! This recipe is very easy to double, triple, or multiply to fit your needs. Just remember you need about 2 tablespoons per layer, so plan accordingly.
  4. Won’t I have leftover granola?
    1.   Yes, you will have leftover granola. This is great news if you plan on making more than just the two  parfaits. It also goes great with fruit and non-dairy milk, like cereal, and for all of your other granola needs!
  5. Are parfaits healthy?
    1. This really depends on the ingredients you use to make it. They can be unhealthy, fattening, and more dessert-like, they can be healthy, or they can be somewhere in between. If you’re looking to make your parfait healthy, look for unsweetened plain dairy free yogurt, use the granola recipe provided, and have fruit be the only other ingredient.

Parfait:

  • 1 cup Almond Milk Yogurt
  • 2 Mangoes peeled and cut up
  • 1 cup Granola
  • 1-2 teaspoons Coconut Shreds optional

Granola:

  • 2 ½ cups Old Fashioned Oats
  • ½ cup Maple Syrup
  • 1 Tablespoon Vanilla Extract
  • 1 cup Almonds sliced

Instructions
 

  • Make the granola by preheating the oven to 375℉, stirring all granola ingredients together, laying them in a thin layer on a parchment lined cookie sheet, and baking them for about 10 minutes, flipping them, and baking them for another 5 minutes.
  • Allow the granola to cool completely.
  • Make the mango purée by taking half of the cut up mango chunks and blending them.
  • Assemble the parfait starting with 1-2 tablespoons of granola on the bottom.
  • Then add about 2 tablespoons of yogurt.
  • Add about 2 tablespoons of the mango parfait on top of the yogurt.
  • Add about 2 tablespoons of granola on top of the mango puree.
  • Add 2 more tablespoons of yogurt on top of the granola.

  • Repeat for the second parfait.

Notes

Each layer is about 2 tablespoons of the ingredient.
This recipe is best when enjoyed right after assembling, and cannot be saved well after assembling. The granola would become mushy if you try saving it after assembling.
You will have leftover granola. It will last in a sealed container at room temperature for up to 2 weeks.
