Rainbow Parfait
This rainbow parfait is naturally vegan, delicious, and nutritious! It’s something every kid would actually ask for, but parents don’t often make.
So, be a fun parent, or adult, or whatever, and make this nutrient dense parfait for your kids, or yourself!

I’m going to recommend almond milk yogurt for this parfait because that’s MY favorite type of yogurt, but you use your favorite type of yogurt for this recipe. Also, feel free to not measure out the ingredients and just eye it.
Seriously, the ONLY reason I measured the ingredients for this recipe is so it could be a recipe and easily shared on this site. I understand everyone has different sized cups and appetites, so estimate what you’ll need and then assemble.
For the granola, I LOVE this vegan, fat free granola recipe, but you can use whatever type of granola you prefer.
Ingredients for Rainbow Parfaits

Almond Milk Yogurt: Use whichever type of yogurt you have on hand or like. Almond milk yogurt is simply the kind I find I like best.
Granola: The linked recipe for granola is the one I like to use and usually have ready made. It’s vegan friendly and doesn’t use any oil, so it’s basically fat free, only using oats, almonds, vanilla, and maple syrup. If you prefer a different granola, go for it!
Blackberries: This is our ‘indigo’
Blueberries: This is our ‘blue’.
Kiwi: This is our ‘green’.
Pineapple: This is our ‘yellow’.
Mango: This is our ‘orange’.
Strawberries: This is our ‘red’.
Coconut Shreds: These are our ‘clouds’.
Feel free to sub in other fruits of the same color in the place of any of the fruit above. If you don’t like coconut shreds or can’t have them, then omit, or add in some vegan marshmallows in their place.
How to Make Rainbow Parfaits

Step one: First, divide the ingredients in half, half for each cup. (Or if you have smaller containers, fill them all at once, one ingredient at a time to divide up the ingredients evenly.)
Step two: Assemble the parfait starting with about 2 tablespoons of granola on the bottom.
Step three: Then add about 2-4 tablespoons of yogurt.
Step four: Next, add all of the fruit, 2-4 tablespoons each, in the order listed above.
Step five: Then add about 1-2 tablespoon more yogurt on top, sprinkle a little more granola, add 1 large berry and 2 blueberries, a teaspoon of coconut shreds and enjoy!
Step six: Repeat for the second parfait.

How to Prep & Serve Parfaits
Serve this parfait ASAP!
It is absolutely the best when freshly made.
To make it easier to assemble, make sure the granola is made ahead of time, and that all of the fruit is ready to put in your glass or jar before starting.
How to Store Parfaits
Parfaits don’t save well overnight. You may be able to save it in the fridge if you can’t finish it in one sitting, but it should be finished within the same day it’s made for best results.
If you want to freeze the parfait, you might as well make yogurt bark instead. You’ll need some parchment paper or a silicone mat (to easily peel the ‘bark’ off of), smooth out some yogurt onto it and then add your fruit and granola. Let it freeze and then break off chunks to enjoy!

- Do I have to use almond milk yogurt, or can I use a different kind?
- You can use any brand or type of yogurt you like. It is recommended to not use a flavored yogurt, unless it’s vanilla, simply because the fruity flavor in the parfait should come from the fruit. If you need to buy a flavored yogurt choose vanilla or the same flavor as one of the fruits in the parfait.
- What size yogurt do I need for this recipe?
- You can buy a tub of yogurt, 1 cup equals 8 ounces. Or, you can buy the individual sized yogurts. 1 individual sized yogurt, at 5.3 ounces, will be enough for 2 parfaits, simply divide in half, you may have a little leftover.
- Can I double or triple this recipe?
- Of course! This recipe is very easy to double, triple, or multiply to fit your needs. Just remember you need about 2-4 tablespoons per layer, so plan accordingly.
- Are parfaits healthy?
- This really depends on the ingredients you use to make it. They can be unhealthy, fattening, and more dessert-like, they can be healthy, or they can be somewhere in between. If you’re looking to make your parfait healthy, look for unsweetened plain dairy free yogurt, use the granola recipe provided, and have fruit be the only other ingredient.

This recipe is best when enjoyed right after assembling, and cannot be saved well after assembling. The granola would become mushy if you try saving it after assembling.
