Vegan Berry Parfait Recipe

This parfait is vegan & dairy free, super simple to make, and is just all around the best vegan breakfast berry parfait recipe you’ll find online.

Almond Milk Yogurt: I personally prefer using almond milk yogurt, it’s my favorite kind. If you prefer a different type of dairy-free yogurt, then feel free to use your favorite kind.

For parfaits, I’d recommend using a plain or vanilla yogurt. If you can only find fruit flavored yogurt, then buy the kind that matches the fruit you’ll be adding to the parfait, such as blueberry or strawberry. But also know that using a flavored yogurt will up the sugar content.

Blueberries: Blueberries taste great in parfaits and since there are only a few ingredients in parfaits, it’s going to be hard to omit anything.You also don’t have to cut them up, just leave them whole.

Strawberries: Strawberries taste great in parfaits and since there are only a few ingredients in parfaits, it’s going to be hard to omit anything. You’ll want to slice or dice these since they are a bit bigger than bite size, though feel free to leave a couple whole for the top.

Granola: Granola tastes great in parfaits and since there are only a few ingredients in parfaits, it’s going to be hard to omit anything. The granola recipe I linked to is fat free and uses just 4 simple ingredients and takes a total of 30 minutes to make, including the time in the oven – it’s only 5 minutes of prep time. 

What I like to do with the granola is make it on the weekend and store it in a 32 ounce mason jar on the counter (or in the cupboard), that way when I need it I’ll have it. Otherwise, if you’re short on time and don’t have the granola made already, you may want to consider store bought granola if there’s one you like to use with a neutral flavor, or a vanilla or almond flavor.

How to Make Fourth of July Parfaits

*Don’t be intimidated by the amount of steps, you basically add all of the ingredients together in layers and enjoy!

Step one:  Make the granola, or use store bought.

Step two: Assemble the parfait starting with 1-2 tablespoons of granola on the bottom.

Step three: Then add about 2 tablespoons of yogurt.

Step four: Add just under ¼ cup of blueberries on top of the yogurt.

Step five: Add about 2 tablespoons of granola on top of the blueberries.

Step six: Add 2 more tablespoons of yogurt on top of the granola.

Step seven:  Add ¼ cup diced strawberries on top of the yogurt.

Step eight: Top the strawberries with 1 tablespoon yogurt.

Step nine: Sprinkle a little more granola on top and then add 1 whole strawberry and a few blueberries on top.

Step 10: Repeat with the second parfait.

How to Serve Vegan Berry Parfaits

Serve cold and ASAP! It is best enjoyed fresh.

How to Store a Berry Parfait

Fridge: Parfaits don’t save well. If you can’t finish it, but might be able to within a couple hours, then go ahead and put it in the fridge. The longer it’s in the fridge, the soggier the granola will get because it’s going to start soaking in the yogurt. If you can finish it in a couple of hours, consider using the directions to freeze it.

Freezer: If you need to freeze this, then consider making yogurt bark instead, by spreading the yogurt, and all of the other ingredients out on a lined baking sheet and then freezing it. Once frozen you can break it apart and store it in a freezer safe container.

FAQs

  1. Do I have to use almond milk yogurt, or can I use a different kind?
    1. You can use any brand or type of yogurt you like. It is recommended to not use a flavored yogurt, unless it’s vanilla, simply because the fruity flavor in the parfait should come from the fruit. If you need to buy a flavored yogurt choose vanilla or the same flavor as the parfait you are making.
  2. What size yogurt do I need for this recipe?
    1. You can buy a tub of yogurt, 1 cup equals 8 ounces. Or, you can buy the individual sized yogurts. 1 individual sized yogurt will be enough for 1 parfait, so you will need to buy as many individual sized yogurts as the number of parfaits you plan on making.
  3. Can I double or triple this recipe?
    1. Of course! This recipe is very easy to double, triple, or multiply to fit your needs. Just remember you need about 2 tablespoons per layer, so plan accordingly.
  4. Won’t I have leftover granola?
    1.   Yes, you will have leftover granola. This is great news if you plan on making more than just the two  parfaits. It also goes great with fruit and non-dairy milk, like cereal, and for all of your other granola needs!
  5. Is this berry parfait healthy?
    1. This really depends on the ingredients you use to make it. They can be unhealthy, fattening, and more dessert-like, they can be healthy, or they can be somewhere in between. If you’re looking to make your parfait healthy, look for unsweetened plain dairy free yogurt, use the granola recipe provided, and have fruit be the only other ingredient.

Notes

This recipe is best when enjoyed right after assembling, and cannot be saved well after assembling. The granola would become mushy if you try saving it after assembling.
You will have leftover granola. It will last in a sealed container at room temperature for up to 2 weeks.
