Ingredients
- 1 box (16oz) pasta (ziti, rigatoni, etc)
- 3 cups marinara sauce (or more)
Tofu Ricotta
- 1 pound (16oz) tofu firm
- 3 tbsp nutritional yeast
- 1 tbsp parsley
- 1 ½ tsp basil
- 1 tsp oregano
- 1 tsp salt optional
- ¼ tsp black pepper
Instructions
- Cook pasta as directed on box
- Mash tofu in a bowl with a fork and add in the rest of the tofu ricotta ingredients, mix well
- Add the tofu ricotta and marinara sauce to the drained pasta, stir well and serve!
