  1. Cook and drain the pasta
  2. Drain the tofu and mash in a bowl with the other ‘ricotta’ ingredients
  3. Add the tofu ricotta and marinara sauce to the pasta, stir & serve

Equipment

  • bowls, utensils, measuring cups & spoons
  • stovetop & large pot

Ingredients
  

  • 1 box (16oz) pasta (ziti, rigatoni, etc)
  • 3 cups marinara sauce (or more)

Tofu Ricotta

  • 1 pound (16oz) tofu firm
  • 3 tbsp nutritional yeast
  • 1 tbsp parsley
  • 1 ½ tsp basil
  • 1 tsp oregano
  • 1 tsp salt optional
  • ¼ tsp black pepper

Instructions
 

  • Cook pasta as directed on box
  • Mash tofu in a bowl with a fork and add in the rest of the tofu ricotta ingredients, mix well
  • Add the tofu ricotta and marinara sauce to the drained pasta, stir well and serve!

Notes

*If you prefer to bake this ziti, go ahead; bake at 350Fº for 35-40 minutes.
