Whether you’ve been vegan for years, or aren’t vegan but want to make vegan friendly brunch recipes, just in case, you’ll be sure to love the recipes below, even my kids LOVE them (and 2 out of 3 are ‘picky eaters’)!

And I totally get it, if you’re not vegan, or newly vegan or plant-based, it can seem like there’s no breakfast options, but luckily, the opposite is true, and breakfast is one thing I specialize in – I’m not one who can go without my breakfast in the morning. And brunch is just a fancy breakfast, am I right!

The plant-based brunch ideas below range from pancakes and French toast casseroles, to lemonades, and even dessert-like sweet brunch ideas (because who doesn’t want to eat dessert for breakfast!).

These recipes are traditional breakfast ideas with a vegan twist and easy, familiar ingredient swaps, along with some unique recipes that you’ve probably never heard of before. With my years (over a decade) of developing, and simplifying, recipes to be delicious, mostly healthy, and 100% kid approved, there’s something below for everyone!

Pancakes, Waffles, and Vegan French Toast

These classic brunch options usually contain eggs, and developing a French toast (and French toast casseroles) without eggs was a bit tricky – it took quite a few tries before I was able to perfect that one. But once I got a regular French toast recipe down, and tasting like French toast, the rest were a piece of cake! (I’m still working on a vegan French toast stick recipe I’m proud of.)

So enjoy the fancier, vegan brunch options below, and know that if there are any leftovers from brunch, all of the recipes either freeze well, or save well in the few days and can be enjoyed warmed up later that week!
